Moscow has commissioned the first in-house production complex of the Kofemania restaurant brand with a capacity of up to 100 tonnes of products per day.
The Kofemania restaurant brand has put into operation its first in-house food industry production complex in Moscow. The full-cycle facility on Ryabinovaya Street (Western Administrative District) was built with the support of the Moscow Government under the large-scale investment projects mechanism (MaIP).
The new factory kitchen has a capacity of up to 100 tonnes of finished products per day, which will be supplied to the chain's restaurants in Moscow and the Moscow region. The commissioning permit was issued on 28 July 2026.
The complex of 13,400 sq. m consists of two buildings — a two-storey production facility and a four-storey administrative building. It creates 530 new jobs. Total investment in the project reached 4.45 billion rubles.
"In terms of automation, technological equipment and production process organization, the new complex is among the most modern enterprises of its kind in Russia," noted Moscow Mayor Sergei Sobyanin.
Unlike most factory kitchens focused on individual production stages, the enterprise combines a full production cycle on one site — from primary processing of raw materials to final plating of ready meals.
The factory houses more than 300 units of high-performance equipment, including robotic lines and automated quality control systems. Production facilities combine meat, fish, vegetable, confectionery and bakery shops, as well as lines for hot and cold dishes, pasta and semi-finished products.
The new production actively uses advanced culinary technologies:
- the sous-vide method of precise gentle heat treatment;
- shock freezing technology;
- modern storage methods that preserve the cellular structure of products, vitamins and taste without preservatives.
"Together with the Moscow Government, we are taking an important step in strengthening technological sovereignty of the region's food industry. The new line will let us offer consumers fundamentally new product formats," the company emphasizes.
For the project, the city provided the investor with a land plot at a preferential rate of one ruble per year, and the Moscow Fund for Industry and Entrepreneurship Support provided investment lending. Under the MaIP mechanism, 30 industrial facilities have already been built in Moscow.
The Kofemania chain continues to grow: by the end of 2025 it had 38 full-format restaurants, and in 2026 the company is preparing to open new venues in Sbercity and on Komsomolsky Prospekt.
